Greaves are a specialty of Emilian origin, obtained from a noble and natural processing of the pig. They consist of fat and lean parts of the pork, cooked for a long time with spices and flavorings, to completely degrease the dough. The lean part that remains is pressed to offer you all the pleasure of a soft and tasty product.
